Regarding your first question, the answer is available at رُطَـــبٌ / Rutab (Ripe Dates) when Ibn Al Qayyam wrote :
When Prophet Muhammad Sallallaho Alaihe Wasallam used to break his fast, he used to eat first ripe or dry dates, or would drink some water. This is a wise decision, because fasting empties the stomach from food. Thus the liver would not find any sufficient energy that it could transfer to the various organs. Sweets are the fastest food to reach the liver and are favored by the liver, especially when one eats ripe dates, in which case the liver accepts it even more favorably, benefits from it and then transfers the benefit to rest of the organs of body. If there are no ripe dates available, one should eat dried dates because they are sweet and nutritious as well. Otherwise, some sips of water would extinguish the heat of the stomach and the Fast. The stomach's appetite would then increase and become ready to accept (and digest) other foods.
Rutab (mostly served in Masjid-ul-Haraam & Masjid-e-Nabawi) are the WET ripe dates that still have moisture, unlike the Tamar (dried dates) which are completely dried.

Brother in Islam i must say Jazakumullahu Khairan for all the information with regards the Sunnah on healing and all the effort that has been made to revive this Sunnah as well. May Allah grant everyone involved Jannatul-Firdous.
1) I would also like to know what the reason and benefit is to breaking the fast with dates or milk or water etc besides that it is the Sunnah of the Holy Prophet صلى الله عليه و سلم?
